I Read Labels Like Crime Scenes

You pick up a bag of chips. They look fine. They smell fine. There is no logical reason for them not to be fine.

Then you flip the bag over and there it is. Milk powder. Sitting near the bottom of the ingredient list like it snuck in while nobody was watching.

The Front of the Bag Is Marketing

This is how it goes. You stop reading the front of packages a long time ago. Plant based, dairy free, natural, made with vegetables, none of it means what you think it means. The front of the box is marketing. The back of the box is where the truth lives, printed in a font size clearly designed to be ignored.

Milk Shows Up Uninvited

Milk shows up in places it has no business being. Chips, crackers, bread, dark chocolate, instant noodles, seasoning packets. Products that were doing just fine without dairy somehow end up with a light dusting of it anyway. And it doesn't always show up as "milk." Casein, sodium caseinate, whey, all the same thing wearing a disguise. Most labels do have to flag milk as an allergen somewhere, which helps, but you still end up reading everything twice.

The Ingredients That Sound Made Up

Then there are the ingredients that sound made up. Gelatin, which is animal collagen, hiding in gummies and marshmallows. Carmine, a red dye made from insects. Shellac, also insects, used to make things shiny. Confectioner's glaze, which sounds lovely until you look into it. At some point you develop a deep suspicion of any ingredient you cannot pronounce on the first try.

Nothing Stays Safe Forever

The worst part is that nothing stays safe. A product can be fine for two years and then quietly change its recipe without telling you. So you end up rereading labels on things you have bought a hundred times, because apparently that is just the job now.

"I Think It's Vegan" Is Not an Answer

And no, "I think it's vegan" does not count as an answer. Did you read the label or did you just not see meat on it? Different standards of evidence entirely.

The Five Second Scan

It takes about five seconds once you know what you're doing. Check for a certification. Check the allergen line. Scan for the usual suspects. Reread it because you missed something. It is not paranoia. It is just Tuesday.
